Farmers Market Fresh Cooking Classes: Pickles Beyond the Cucumber

Illinois Stewardship Alliance and Chef Alisa DeMarco invite you to join us on farm at Prairie Fruits Farm and Creamery for three different cooking classes featuring local ingredients, simple yet elegant recipes, and bright flavors. Make the most of the season and enjoy an evening of fine food, friends, and fresh cooking. All classes will take place between 6 and 8pm and cost $25 per person.
August 25th: Tomatoes, Tomatoes, Tomatoes
Learn how to make use of your abundant harvest during summer’s bounty. Students will sample a range of heirloom tomato varieties and learn some tasty techniques!
Recipes include: Oven dried tomato crostini with fresh chevre and oregano; Heirloom tomato and watermelon gazpacho with yogurt drizzle; Quinoa salad with tomatoes and herbs; Roasted tomato balsamic vinaigrette
September 1st: Pickles Beyond the Cucumber
Pickling is an art that preserves the harvest and add excitement and depth to your cooking repertoire. This class will introduce you to the basics and do’s and don’ts of modern pickling and teach you some basic recipes to get started.
Recipes include Quick Pickled Red onions, Pickled Green Tomato Chutney and Curried Carrot Pickles
September 15th: Farm to Table Basics
Get a grip on seasonality and use uber fresh ingredients to prepare an amazing meal!
Recipes include: Goat cheese Croquettes with Red Pepper Coulis, Spanish Ceasar Kale Salad, Roasted Butternut Squash with Maple and Pepitas, Fried Green Tomatoes with Jalepeno Sweet Corn Relish
