Local Flavors at Driftwood

Dine out for Local Flavors and experience the true flavors of Illinois. Each participating restaurant will create a farm-fresh meal featuring seasonal ingredients grown by local farmers. Good for you. Good for your community. Good for the earth. Now that’s a bite we can all get behind.

Chef Ryan Lewis of Driftwood has decided to make his Local Flavors dinner extra special. He’ll be teamin up with Big Thorn Brewing to serve a four course menu paired with their craft brews.

1st Course
Green Tomatoes 3 Ways (pickled; roasted; fried)
or
Beets 3 Ways (pickled; roasted; shaved with beet top salad)
Paired with: Farm Red

2nd Course
Heirloom Beans with Pork Belly
pickled cherry tomato; tarragon-cucumber buttermilk
Paired with: Double Rye

3rd Course
Slow Braised Lamb or Eggplant
stewed tomato and okra; cheddar polenta
Paired with: TBD

4th Course
Black Peppeer Panna Cotta
wheatberry crumble; seasonal fruit; sesame oil
Paired with: Citra Sour
